Feisty Bento #331: Vegan Bento?

What's that?  My largest Lock&Lock container (actually, it's not Lock&Lock, but L&L style)... because I put another salad in there.  Mmm, this weather just makes me want salads - super hot.  Spring has sprung, baby!!! 

Again: spinach, Romaine lettuce, celery, shredded carrots, red bell peppers, sliced button mushrooms, green onions, and sugar snap peas. 

What's new?

The dressing! 

I'm calling it miso-tofu dressing for now.  It still needs a slight tweak or two before I can reveal the recipe, but it's super easy to make, and very tasty (even tastier once I get that tweaked a bit).  I know it's ugly, but I don't have a food processor, so it was hand blended - with a spoon.  And it was freaking tasty! 

Think outside the lunchbox!!!

PS This might even qualify as a vegan lunch, though I'm not entirely sure about the dressing because I don't know what's vegan and what's not really.  Ooh.  Vegan?!

  2. Slurp! Dang that looks good. The lil' one makes something similar for her Daddy for lunch, but she uses a vinagrette - he LOVES it.

  3. If you don't gave the recipe we can't tell you if it's vegan or not ;)
    no egg and no dairy (of course no meat and no fish), no honey ... ? it must be vegan ;)

  4. I think the dressing looks good with a little texture, actually. And tofu in it is a great way to bump up the protein profile. I can't wait to see the tweaked recipe!
